![]() I think the real key to them is the shortening. I haven't yet made them low fodmap, but given they don't have to rise, it should work pretty well, they'll just be denser and thicker than "normal". Making white tortillas isn't that hard, but you'll find they're much thicker. Here you can experiment with different sauces (and low fodmap cheeses, or do it on half). Regular tortillas won't stand up to the full baking, but these do. ![]() you can even make a kind of deconstructed enchilada casserole without bothering to wrap everything, just layer instead. Corn tortillas (again, a good quality one) are great in enchiladas. It may not be always what you desire (we get to like white flour, for sure), but heat them up in the toaster oven or the oven before you use them. Getting some decent quality hard shell (corn) tortillas makes a big difference. I live in Colorado, so there's a wealth of good tortillas of all varieties at every grocery, but here's what I know in general: But it provides almost no calories so its pretty much a wash. Iceberg lettuce gets a bad rap, because it provides no nutritional value. Taco salad!!! Just put all the taco fixings on a bunch of iceberg lettuce, and break some tortilla chips on top (or use them as a spoon). They are a little thinner than most of the grocery store brands which might cut down on the cardboardiness for you. We once bought some that were $6 for a dozen, which tasted amazing but we probably can't justify more than once every year or so. We don't buy nice ones often but if you have a little extra money, try splurging once and a while. Hard shells are nice because you know to expect a messÄ«etter quality tortillas can make a real difference. Baking or pan frying for a couple minutes can make them much easier to handle. ![]() I know it's not exactly what you asked but we use the corn tortillas a bunch, and as long as its not the flavor you hate, we've found a few tricksÄon't microwave them like you can for flour tortillas, it really doesn't make them any more pliable, or reduce their rubberiness.
